Of boys and brownies!


i owe my love for food to a boy

this is an ex-boy!

no, i wont make you read through the whole sad story, i'm too kind for that!

so when youre 16/18/21/ ( i'm not going make my age any more obvious) you listen to sad mushy feeling-busting love songs, cry into pillows ,meet the best friend for coffee(or whatever liquid it takes) , wallow in it in whatever way you can and then VOILA  one day you wake up and dont feel so bad!
if youre lucky, you also realize what a douche he was!

you pull your socks up, put on some pink lipstick and catwalk back into your life! #yaymoment

then, growing up some more  realization dawns, that you dont need the drama anymore!
you look for the THE ONE or someone close, because stability would be nice and comforting! (i know, wise words right)
then you meet someone who fits the bill, and feel, did i conquer Mt.Everest or what!

then 'someone' pushes you off Mt.Everest, Jill comes tumbling down

survival of the fittest! survival involves change! bigger the better!

i changed my job, moved to a different city, and started living all by myself !

the thing about living alone is that you start realizing that food is a massive part of your life and day!
initially its a rainbow variety of takeaways but then palate boredom sets in and then a boycott is issued against takeaways of any kind!

thus began my experiments in the kitchen!

sometimes it would be something as simple as a toasted loaf of bread with some chopped tomatoes,rock salt and extra virgin olive oil drizzled on it!
some other times, i'd chance upon a neglected pack of vermicelli in the kitchen closet , add some orange zest, sugar and cream to it to get a divine pudding for dessert!


a while later, i started baking!
brownies were the first baking that i did with chocolate and iv been an incessant brownie baker and eater ever since!

the first batch that i made was cakey and crumbly, i would realize much later that  it had a good amount of flour and not a lot of butter which gave it its cakey crumby texture!
ofcourse , i loved it anyways! because,

there is NO wrong brownie! 

much later , i made a chunky brownie, out of sheer convenience!
i had one egg and so added extra butter and extra sugar and extra chocolate to make up the batter!

THAT brownie, was my undoing!!

chunky, gooey, fudgey, ..   one bite, and you went straight to chocolate heaven!

goes without saying that these are the only brownies i bake ever since!


i have tried a lot of combinations since then with white chocolate chips, snicker bar chips, salted peanuts, etc but , this is my most favourite combination!

salted caramel and dark chocolate ganache brownie bars:

i must warn you, these are like resuscitation after absolutely anything that could have stabbed your good day!
moderation is not going to be easy!
  
-once baked, chill the brownies in the baking tin for atleast 3hours or so,  
-pour hot and freshly made caramel sauce on top, sprinkle some rock salt and chill again, till the the caramel sauce cools and sets.
-once set, pour some dark chocolate ganache (made with some dark rum and 40% or  70% dark chocolate) on the caramel and let it chill and set!
-cut into squares

now,  no matter who asks,  Dont Share!
